Lazy B*itch Kitchen | Tex Mex Vegetarian Crustless Quiche

Hello my beautiful munchkins. I’m back with another lazy b*itch kitchen recipe. If you’re new here, then you aren’t familiar with the lazy b*itch kitchen. It’s essentially my recipes that I make, but use a shortcut to make it easier. Almost all them require little to no effort, but are going to taste amazing.
I like Quiche. It’s one of my favorite foods, and I can always fall back on this recipe in case I’m craving it, but don’t want to have the dough portion of Quiche. This is vegetarian, so all you non meat eaters can make this. It has a little bit of spice, but lots of flavor. You can serve this alone, or with a side of fruit salad. Crustless Quiche can be taken in many directions.
Ingredients
8 Large Eggs
⅓ Cup of Coconut Milk (or heavy cream)
½ TBSP No Salt Seasoning
½ TSP Garlic Pepper Salt
½ TSP Minced Garlic
1 Diced Serrano Pepper (no seeds bc I’m a weenie)
8 oz Diced White Mushrooms
9 oz Trader Joe’s Soy Chorizo
4 oz Colby Jack Cheese
Directions
  1. Preheat oven to 350°F/175°C
  2. In a mixing bowl add egg, coconut milk, and seasoning, beat with a whisk
  3. In a medium-sized pan take chorizo, Serrano pepper, minced garlic, and mushrooms
  4. Cook for 8-10 minutes, over medium-high heat
  5. Set aside filling, and let it cool
  6. Thoroughly grease round cake pan with nonstick cooking spray
  7. Add chorizo filling first, then egg mixture over it
  8. Sprinkle cheese over the top.
  9. Cook for 35-40 minutes until center is firm and knife comes out clean
